It is the ideal topping for truffles, bonbons, honey breads, cakes, pies and sweets from the chocolatier in general. Just melt it to get thinner and brighter cones. Yield up to twice as much as with chocolate. Also use to dip dried or fresh fruit, lollipops and cookies.
STORAGE : Ensure perfect performance, store in a dry, ventilated place at a temperature below 25 ?C and away from products with strong odors. After opening, return the product to the original packaging and wrap it in plastic film, sealing the contact with the air.
RIGHT TEMPERATURE : During the melting, control so that the coating does not exceed 50 ?C, the temperature at which the sugar starts to burn, compromising the fluidity. Bathe honey buns, truffles or mold chocolates and Easter eggs with the Top between 38?C and 42?C. Then take the pieces to the fridge until they dry or until the mold becomes opaque, ensuring shine and stability. Always use a culinary thermometer to ensure the handling was correct and here’s the technique to melt the topping with ease! Here’s how to make the melt Melting: 45 ?C to 50 ?C Usage temperature: 38 ?C.
